COVID-19 Virus Shutdown, Day 76

Now that I've finished the book about sailing on a 2 year excursion, (turns out for the second time!) (Yeah its totally worth reading twice) where one of the recipes in here were conch fritters, 

I picked up a book apparently about apples. So what better dessert to make than an apple fritter loaf?
(Recipe follows)



I'm nearly out of foil, so my base of the fritter loaf has some foil but I'm afraid the loaf may still stick. It has a lot of sugar, as you can imagine. And sugar loves sticking to pans. 

What's cool about this recipe is it has layers - batter, apples, and cinnamon brown sugar, repeat, then bake. Pretty simple. 

My daughter loves apples so she will be happy when it's done. She even bought apples for it specifically. 

After taking a whopping 4 hours to make dinner (chicken enchiladas - a favorite of Hubby and I) and finish my book, I realized when you do what you love (which of course includes eating it) time flies!

I did check the gardens this morning and am actively ignoring how much the water caused a bunch of weeds to take over the back yard flower garden. (crap)

And Im actively admiring my tomatoes and celery in the raised beds. 

My back cries a little when I think of all the work ahead of me. 

Speaking of being old and creaky, my new to me office chair turns out to hurt my tushie. I'll have to take a pillow with me tomorrow. 

Anyway, the apple fritter loaf is about an hour bake, so when you do make this, give yourself time.

Recipe for Apple Fritter Loaf - not my recipe, taken off the internet:

Serves 8
1/3 cup brown sugar
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
2 apples, peeled and chopped (any kind), mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon

I use Macintosh apples..I find they're better for baking. I definitely use more than 2 apples but I love apples. I always peal, thinly slice my apples and freeze them in a medium freezer bag.
***I use half a bag when thawed***
I always have lots of bags of apples in the freezer. Alot of work at 1st....but so easy to just grap a bag from the freezer when you want to make fritter loaf, apple crisp or a pie!
More apples the better??
(you can also grate the apples instead of chopping them.... it is quicker}

2 options for a topping:

Cream Cheese Glaze Ingredients
• 2 ounces cream cheese softened
• 2 Tbsp butter softened
• 1/2 teaspoon vanilla
• 1/2 cup powdered sugar
• (If you don’t have powdered sugar you can make it pulsing granulated sugar in a food processor until fine)
Mix ingredients until smooth. Warm until pourable and allow to set before serving.

......OR ......

Old-Fashioned Creme Glaze
1/2 cup of powdered sugar
1-3 tablespoons of milk or cream- (depending on thickness of glaze wanted)

Instructions
1-Preheat oven to 350'F. Use a 9x5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
2-Mix brown sugar and cinnamon together in a bowl. Set aside.
3-In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.
4-Beat in eggs, 1 at a time, until blended in; add in vanilla extract.
5-Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended.
6-Mix milk into batter until smooth.
7-Pour half the batter into the prepared loaf pan; add half the apples and half the brown sugar/cinnamon mixture.
8-Lightly pat apple mixture into batter.
9-Pour the remaining batter over apple layer and top with remaining apples and brown sugar/cinnamon mixture.
10-Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.
11-Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 60-75 minutes.
 Really depends on the dish or pan you use. Example: bundt cake pan, round cake pan, loaf pan etc....
12-To make glaze, mix powdered sugar and milk or cream together until well mixed.
13-Let cool for about 25-30 minutes before drizzling with glaze.

****Muffins****

1-Preheat oven to 375'F
2-Bake in preheated oven until a toothpick inserted in the center of the muffin comes out clean, approximately 20-25 minutes.
