COVID-19 Virus shutdown, Day 9

The playgrounds and the malls both closed today in our county.
It's okay, I'm treating this how we act when we are up north. Life is a bit slower.
My son and I did play games all day, but they were video games. We couldn't do that up north!

I'm thinking right about now, if I didnt cook, or didnt know how to cook, door dash and grub hub are getting mighty expensive.
And you can only eat so much macaroni and cheese, frozen chicken nuggets, and tater tots.

Fish seems to be easiest to get, since we are in Lent right now.
So in the spirit of sharing, how about I share how easy making dinner can be, and talk about what i made? Could help somebody.

On the menu:
Dilled Salmon with garlic dill sauce
Broccoli
Buttered Tortellini
Dinner rolls

Dilled Salmon
Frozen salmon, pre cut
Dill mix from Pampered Chef
or
Dill weed & Garlic powder
Lemon, halved
2 Tbsp Olive oil
Salt

Frozen Salmon is removed from the packaging and thawed in the microwave  on a plate
Pour out the water that accumulates
Pat the salmon down with paper towels.
Put olive oil in the frying pan and heat until a drop of water sizzles (no more than a drop!)
Carefully put the salmon fillets in non skin side down the frying pan and cook for 3 mins
Flip over, to the skin side. Turn down the heat. Sprinkle with dill weed and garlic, and a squeeze of lemon so that a few drops fall on each fillet.
It's done when the flesh becomes flaky.
Once done, take out of the pan or the residual heat will make it dry.

Dill Sauce
3 Tbsp sour cream
1 Tbsp mayo
1 Tbsp dill weed
1 tsp garlic powder
salt to taste
pepper to taste

Mix in a small bowl

Broccoli
1 bunch broccoli
Salted water
Butter

Boil saucepan of water. Add a large pinch of salt
Chop the broccoli into 3 inch pieces until tender
Drain and place in a bowl, and add a pat or two of butter.
Mix until melted

Tortellini
1 package of fresh tortellini
Salt
Butter
Optional garlic powder

Boil large pot of water. Add salt
Put tortellini in the boiling water, carefully.
Follow package directions, typically about 7-9 minutes.
Drain
Add a pat or two of butter and mix gently until it melts
Optionally add garlic powder to taste.

Dinner Rolls
Heat and serve rolls

These can be heated in the toaster oven, for about 9 minutes.

The cadence would be
1. Start the water for both tortellini and broccoli
2. Boil the broccoli first
3. Thaw the salmon
4. Start the tortellini
5. Set the table
6. Cook the salmon
7. Heat the rolls
8. Plate the salmon, put the rolls in a bowl with some paper towel (for the steam), put out butter and a knife, put the tortellini in a bowl, put the dill sauce out, and the broccoli out.

Hope this helps someone :)

Let me know if it did, or if you need a recipe for something else. I'd be happy to help.
Stay safe and healthy!
Vicky
