Toaster Ovens and no bakes.

When a problem presents itself to me, after the initial panic, and worry, I tend to chew on the problem. 
My mind has an optimistic side that tries to find avenues to still do what I need to do. 

With the prospect of no oven for weeks and weeks, especially with both kids graduating and gifts being purchased, I need to wait to get the oven fixed or replaced. 

Meantime I have a toaster oven and I can make no bake items. 

What are no-bakes?
Cheese cakes, fudge, Mousse, ice cream, barks, rice krispie treats
And the other things can be done in a toaster oven, just smaller. 
Muffins, cupcakes, biscuits, bacon, scones, pizza, cookies, small cakes, small pies, breads

It makes me breath a sigh of relief to at least have a plan. So rather than worry about not getting an oven any time soon, I'm going to see if I can make these things in a toaster oven. 

Stay tuned as I try these things out. :)

Before breakfast, I punched down the sourdough that was now more than doubled. Then I pushed it into a wide flat shape and rolled it up, tucking it into a loaf pan. I let it sit until after the lunch time baking was done. For lunch we made khachapuri. This was my friend's recipe I mentioned earlier. Since my stand mixer was in the dishwasher I used the breadmaker to mix the dough. When it was ready I asked if the kids wanted one of the dough balls to make their own. Here is what each of us did. Son made cheeseless pizza (upper left) I made cheese with butter and green onions (bottom right) This one will get the egg The one on the left is cheese and butter only The one on the right is cheese and brown sugar (it kept unfolding!) Chicken Roma I have to say it was a pretty good day. I spent hours in the garden and then cooked a fabulous dinner. I even got to read a book! Since the hubby has been working so hard on his diet, I've been looking for really good tasting recipes that are good for you, and from scratch. This one didn't even seem to take that long (but I was doing what I love, so it may have been an hour or more). I had to share it with you so you can try this recipe! The first thing you notice is that the recipe calls for both chicken breast and chicken thighs. I don't think I've seen one like that before. You cook the chicken first in olive oil until browned and then take them out of the pan to rest. Of course I ran OUT of olive oil, and by the way, if you turn your back on it, olive oil smokes. A lot. So I supplemented the olive oil with cooking oil. It was fine, and I didn't burn the oil. Whew! Chicken browned on left. Prosciutto and garlic on the right. See

Day 10: 40 Days of Lent: Cookie Brownies and Double Chocolate muffins!

Chocolate is my addiction, I must admit. Especially when it's warm. I think about it, dream about it, bake it, make candy with it, eat it after lunch or dinner nearly every day. So when i think about birthday cakes or even the charity I bake for, I'm always looking to make chocolate-something. Or when its Saturday and I have some time on my hands. I think about it then too. :) This week, I had been cruising around the internet, and my sister in law mentioned that it was time for Chocolate muffins. I agreed. I felt tired and turned off the computer. Then, my mind started ticking away. I had recipes, lots of them. I would bet among all those recipes I had a recipe for Chocolate muffins. Hmm.
