Day 21: Stop, wait a minute.

Have you ever started a project and got about half way through and started thinking: what was I even doing here?

The more I thought about the last post, the more I realized: I just taught you how to take a chemically laden box of cake mix and condense it by not adding the water to make brownies. Genius.

I feel bad.

The original intent for this blog was to help you understand how to eat well in order to avoid cancer -- at least the part where it is possible to prevent it.

And yet I took the easy road and then blogged it.

Great idea, use one thing for another in a pinch, but not the boxed stuff.

So then what do I do about it?

I am hereby redeeming myself by offering a cake mix and a brownie mix made from scratch. 
You can make them ahead for when you need cake or brownies and it will cost less this way. Plus you don't have the chemicals and since they are dry mixes you dont have to worry about spoilage. (This is why nuts are part of the wet ingredients; they go rancid when sitting around too long.)

Chocolate cake mix
Ingredients:
Dry ingredients to make ahead:
1 3/4 cups all-purpose flour
1 3/4 cups sugar
1/2 cup cocoa (not Dutch process)
1/3 cup instant nonfat dry milk, such as Carnation
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon fine salt
Put these in a jar or sealed plastic bag.

When ready to bake, gather these wet ingredients:
Nonstick cooking spray
1/2 cup vegetable oil
3 large eggs, at room temperature
1 tablespoon pure vanilla extract

Line two 9 inch pans with parchment and coat with cooking spray.
Mix wet ingredients, add the dry.
bake in pans at 350 for 20-25 minutes. Let cool 5 mins and then
Turn out to cooling rack.

Alternatively, line 24 cupcake tins with papers and bake 20 mins.



Brownie Mix
Ingredients:
Dry ingredients to mix ahead.
 1 cup white sugar
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
Put these in a jar or sealed plastic bag.

When ready to bake, gather these wet ingredients:
1/2 cup chopped walnuts (optional)
1 teaspoon vanilla extract
2 eggs
1/2 cup vegetable oil

Mix wet in one bowl.
Add dry to wet by thirds.
Lay foil in the pan and spray it with olive oil
pour the batter in and bake at 350 for 20-25 mins.

When it comes out and cools, lift the foil up onto a
cutting board and pull away
from the brownies, cut the brownies and put either back
 in the pan or on a decorative plate.
