On Cooking - Marinated Chicken 6/27/21

There is this book from Cookery class called On Cooking. Once we were duly trained in culinary school at not killing each other with bacteria or knives, we got to start cooking. 

I like having this book but it was gathering dust. I forget sometimes that it really is a source for all things food. I just spent the last few hours going back over it. 

It's amazing all the sauces, for instance, that we can whip up, if only we had access to things like bones and marrow. Not living on a farm in France,  I'll have to search for where to get those later. I needed to make dinner soon. 

Chicken was next on the "meat wheel" and... what you dont have a meat wheel? Well maybe not on paper, but you probably don't eat chicken every day of the week do you? No, you change it up, right? Beef one day, fish the next, maybe tofu or chickpeas if you are vegetarian or vegan. 

Anyway, chicken was up next, but most things in the book called for something with leafy greens. If you've been following the blog, you know I'm on Warfarin until August 10th, and can only have it every other day. Today was not that day. 

So I went with a chicken marinade. I didnt have any white wine, it turns out, so I improvised. I added 1 tbsp rice wine vinegar and used some chicken stock instead. It will be different, but it should work. I hope. I only used half of it so if it works out I will use it again. 

On the stove is potatoes and eggs for potato salad and parmesan zucchini on the baking sheet for sides.
Waiting now for the oven to heat up. 

Having always admired Julie Powell for having stuck with blogging about her year long cooking adventure, I wanted to do something similar with this book. I'm a little scared of the prospect, I mean really, it will take a year if I make one meal per day complete with side and dessert. And even then I'm not sure i will get through all the sauces!

How the heck did she organize it all?

I could try it anyway. There's a pretty good chance I'll need to make things to eat anyway, most days, and with Vickys Cakes, I could run through the recipes just to try them all out.

Ok so it looks like raw chicken next to the green of the Dill potato salad and Parmesan zucchini, but I promise it was thoroughly cooked and really good. I only marinated it for 30 mins (15 on each side). 

I'd say this one was a winner. :)
